Different Food Types
If you are interested in cooking, then there are essentially two ways you can go about learning the trade. The first way to do it would be to focus on one particular type of food and master that before moving on to the others. This way has the advantage of allowing you to really understand cooking fundamentals as they apply to a number of similar foods and many would say it has the ability in that sense to make absolutely certain that you know what you are doing before moving on.
However, people that defend the second way of doing it say the same thing too. The second way of doing it would be to pick one or two dishes from each group and work on mastering those before moving on. The ability you would have at the end of that would be far greater in terms of diversity and therefore you would have had to learn skills very well in order to get that far with such different recipes to prepare. Whichever one of these two methods you eventually decide to go with, there are a number of ways that you can divide up the dishes to choose from.
The first one of those ways would be to divide the foods based on the meal they are served at and the part of the meal they are served at as well. For example, dinner appetizers would be one food type and then another food type might be late brunch main courses. These are the types of groups that people usually use with the second strategy of learning because it allows them to learn one or two choices for each part of the day and therefore develop a diverse cooking repertoire even before they've really made it up to a high level of proficiency as a cook.
Another division of food types that people frequently make depends on the ethnicity from which the food type originated. This means that all American food would be one type of food, all Canadian food another, all French food a third and so on for all of the different cultures of the world. This is a division that is used in both of the learning strategies, because the end result is either a complete understanding of one ethnicity's food or else a good selection of dishes from a wide range of ethnicities; both of which are good resolutions to the first stage of learning.
Finally, a third food type division could be by the main ingredients that find themselves in the meal. For example, all of the chicken dishes might be one food, all of the beef dishes another and all of the seafood dishes a third. You can then sub-divide seafood into fish, shrimp, scallops and a number of others. This is once again used in both cooking strategies because of the very agreeable end result of using either one of those strategies for learning with this particular division of foods.
