Apple Pancakes

Apple Pancakes

  • 1/2 cup pancake mix
  • 1/2 cup milk
  • 3 tbsp. sugar
  • 2 tbsp. butter
  • 1 tsp. salad oil
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1 egg
  • 1 apple, sliced

Directions:

Melt butter and combine with apple slices, cinnamon and sugar.

Heat apple mixture together until it becomes bubbly.

In a seperate bowl, combine pancake mix, baking powder, milk, egg, salad oil, and 1 tablespoon of sugar.

Pour pancake mixture on top of the apple mixture. 

Bake in oven for 10-12 minutes at 400 degrees.

Serve pancakes with powdered sugar or syrup.

Hot Spiced Cranberry Punch

Hot Spiced Cranberry Punch

  • 4 cups pineapple juice
  • 4 cups water
  • 2 cans jellied cranberry sauce
  • 2 cups light rum
  • 3/4 cup firmly packed brown sugar
  • 3/4 tsp. ground cloves
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground allspice
  • 1/4 tsp. salt
  • 1/4 tsp. grated nutmeg

Directions:

Bring sugar, 1 cup water, salt, and spices to a boil.

Mash cranberry sauce with a fork.

Add remaining water to cranberry sauce and beat with a rotary beater until smooth.

Add cranberry liquid and pineapple juice to hot spiced syrup and heat to a boil.

Add rum.

Serve hot with cinnamon stick stirrers.

Makes approximately 20 5-oz. servings.

Hot Spiced Cider

Hot Spiced Cider

  • 8 oz. light rum
  • 2 quarts fresh apple cider
  • cinnamon sticks

Directions:

Heat cider with cinnamon sticks, occasionally stirring. 

Add rum just before serving. 

Or, pour 1 oz. rum per 8 oz. seving into heatproof mugs before adding hot cider mixture. 

For small glasses or punch cups, use less rum.

Makes approximately 24 3-oz. servings

Easy Oven Fried Chicken

Easy Oven Fried Chicken

  • 1 frying chicken, cut into 8 pieces
  • 1 1/2 cups dry bread crumbs
  • 1/4 lb. butter, melted
  • 1 tsp. salt
  • 1/8 tsp. paprika
  • 1/8 tsp. garlic powder
  • 1/8 tsp. thyme

Directions:

Put all ingredients except chicken and butter into a paper bag.

Dip chicken pieces in melted butter, then shake in paper bag. 

Lightly grease a 9 x 13 inch baking dish and place chicken skin side up.

Bake in oven at 350 degrees for 50 minutes or until cooked.

Makes 6 to 8 servings.

Easy Chicken Tetrazzini

Easy Chicken Tetrazzini

  • 3 cups shredded chicken
  • 1/2 pkg. fine noodles
  • 1 can mushroom soup
  • 1 can (4 oz.) mushrooms, drained
  • 1/4 small can parmesan cheese
  • 1/2 pint sour cream

Directions:

In salted water, boil the noodles for about 8 mins. 

Combine noodles, soup, mushrooms, shredded chicken, and parmesan cheese in a bowl. 

Stir in sour cream. 

Place mixture into a greased baking dish.

Bake in oven for 1/2 hour at 350 degrees.

Remove from oven, stir in a bit more parmesan cheese and serve.

Hot Fruited Cider

Hot Fruited Cider

  • light rum
  • 2 qt. fresh apple cider
  • 2 cups unsweetened grapefruit juice
  • 1/2 cup brown sugar
  • cinnamon sticks

Directions:

Heat all ingredients except the rum in a non-reactive saucepan. 

Simmer for a few minutes. 

Warm a heatproof punch bowl or pitcher and heatproof punch cups or mugs. 

Add 1/2 to 1 oz. of rum to each cup or mug. 

Strain and decant warm cider into a prepared container and serve.

Makes approximately 30 3-oz. servings.

Escalloped Cabbage

Escalloped Cabbage

  • 1 lb. cabbage, coarsely shredded
  • 2 quart water
  • 5 tbsp. butter
  • 3 tbsp. flour
  • 1 1/2 cups cracker crumbs, buttered
  • 1 cup milk
  • 1/2 cup sugar
  • 1/4 cup salt

Directions:

Cook 1 pound cabbage in 2 quarts of boiling water seasoned with salt and sugar for 4 minutes. 

Drain and put cabbage in a 2 quart flat casserole. 

To create cream sauce, first melt butter in saucepan.

Stir flour in and add milk slowly. 

Cook cream sauce until thickened over medium heat. 

Pour over cabbage in casserole and sprinkle with buttered cracker crumbs. 

Bake in oven for 45 minutes at 325 degrees.

Easy Pound Cake

Easy Pound Cake

  • 3 cups plain flour
  • 1 tsp. vanilla
  • 6 eggs
  • 3 sticks margarine
  • 1 box powdered sugar

Directions:

Mix togethere margarine and sugar. 

One at a time, add the 6 eggs. 

Add vanilla and plain flour. 

Bake in tube pan for 60 minutes at 350 degrees.

Torridora Cocktail

Torridora Cocktail

  • 1 1/2 oz. light rum
  • 1/2 oz. coffee-flafored liquor
  • 1 1/2 tsp. cream

Strain into a chilled cocktail glass.

Float the following on top by slowly pouring over the back of a spoon:

  • 1 tsp. 151-proof rum

Don’t mix.

  • 1 1/2 oz. tequila
  • 1/2 oz. white creme de cacao

Strain into a chilled cocktail glass and top with whipped cream.  Dust lightly with cocoa and enjoy.
