Calico Meringues

Calico Meringues

  • 2 egg whites
  • pinch of cream of tartar
  • 3/4 cup M & M candies
  • 1/2 cup sugar

Directions:

In a bowl, beat egg whites with cream of tartar until it becomes foamy.

Gradually beat in sugar to make a stiff meringue. 

Fold in M & M candies. 

Grease and flour large cookie sheet. 

Garnish each cookie with an M & M candy. 

Bake for 1/2 hour at 250 degrees or until cookies are firm to the touch. 

VARIATIONS:  Red and green for Christmas.  Pastels for Easter.

Chocolate Chip Cookies

Chocolate Chip Cookies

  • 2 cups flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 cup butter, melted
  • 2 tbsp. instant coffee granules
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 large egg
  • 1 egg yolk
  • 1 (12 oz) package semi-sweet chocolate morsels
  • 1 cup pecans (optional)

Combine flour, baking soda and salt, stir well. Stir together butter & coffee granules until dissolved. Combine butter mixture, sugars, and egg & yolk in a large bowl and blend with mixer. Gradually add flour mixture and beat at low speed until blended. Stir in chocolate morsels and pecans.

Drop heaping tablespoonfuls approx. 2 inches apart onto a lightly greased baking sheet.  Bake at 325° for 12 to 14 minutes.  Remove and let cool.

Note: Be careful not to overbake.  Cookies will continue to bake once taken out.
