Chicken Tortellini Soup

Chicken Tortellini Soup

  • 6 cups water
  • 1 tsp. basil
  • 1 tsp. oregano
  • 3 cans cream of chicken soup
  • 2 boxes frozen broccoli
  • 1 pkg. boneless chicken breasts
  • 1 bag cheese tortellini
  • 2 carrots
  • 2 garlic cloves
  • 1 onion

Directions:

Cut chicken into small bite-size pieces and cook in a small amount of oil. 

While meat cooks, chop vegetables and open cans. 

Add all ingredients except for the tortellini and frozen broccoli to large kettle.  

Simmer for approximately an hour, then add broccoli and tortellini for final 10 minutes. 

Optionally add freshly grated Italian cheese and serve with a loaf of Italian or French bread.

Chicken in Cheese Sauce

Chicken in Cheese Sauce

White Sauce:

  • 1 cup milk
  • 2 tbsp. butter
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Mix together butter, salt and pepper above over low heat in saucepan.

Add a cup of milk and continue to stir.

  • 1 cup sharp cheddar cheese
  • 1/4 cup sherry
  • dash of hot pepper

Directions:

Stir over heat until sauce thickens and cheese melts.

  • broccoli spears
  • chicken breast, sliced, parboiled

On the bottom of a baking dish, place broccoli spears and slices of chicken breasts. 

Pour sauce over chicken, sprinkle romano or parmesan cheese. 

Bake in oven for 1/2 hour at 350 degrees, serve over rice.

Mexican Chicken Casserole

Mexican Chicken Casserole

  • 6 chicken breasts (or 1 whole chicken)
  • 1 can cream of mushroom soup
  • 10 oz. velveeta cheese
  • 1 cup milk
  • 1 can rotel tomatoes
  • 1 bag doritos

Directions:

Boil chicken, then remove bones and chop up.  

Combine milk, cheese, mushroom soup and tomatoes and bring to a boil. 

Add chicken and simmer for 5-10 minutes, frequently stirring. 

Put layer of doritos in long casserole dish, then layer meat mixture. 

Add layer of chips, layer of meat mixture, with a layer of dorito chips on the very top. 

Bake for 1/2 hour at 350 degrees.

Easy Oven Fried Chicken

Easy Oven Fried Chicken

  • 1 frying chicken, cut into 8 pieces
  • 1 1/2 cups dry bread crumbs
  • 1/4 lb. butter, melted
  • 1 tsp. salt
  • 1/8 tsp. paprika
  • 1/8 tsp. garlic powder
  • 1/8 tsp. thyme

Directions:

Put all ingredients except chicken and butter into a paper bag.

Dip chicken pieces in melted butter, then shake in paper bag. 

Lightly grease a 9 x 13 inch baking dish and place chicken skin side up.

Bake in oven at 350 degrees for 50 minutes or until cooked.

Makes 6 to 8 servings.

Easy Chicken Tetrazzini

Easy Chicken Tetrazzini

  • 3 cups shredded chicken
  • 1/2 pkg. fine noodles
  • 1 can mushroom soup
  • 1 can (4 oz.) mushrooms, drained
  • 1/4 small can parmesan cheese
  • 1/2 pint sour cream

Directions:

In salted water, boil the noodles for about 8 mins. 

Combine noodles, soup, mushrooms, shredded chicken, and parmesan cheese in a bowl. 

Stir in sour cream. 

Place mixture into a greased baking dish.

Bake in oven for 1/2 hour at 350 degrees.

Remove from oven, stir in a bit more parmesan cheese and serve.

Easy Barbecue Chicken

Easy Barbecue Chicken

  • 1 package dry onion soup mix
  • 1 (8-10 oz.) jar apricot preserves
  • 1 sm. bottle pink russian dressing

Directions:

Mix ingredients together and pour over skinned chicken pieces.

Bake in oven for 90 minutes at 350 degrees. 

Remove and serve barbecued chicken warm.

Oriental Chicken

  • 2 cups Swanson chunk white chicken
  • 1 cup cream of mushroom soup
  • 1 cup pineapple chunks in pure pineapple juice, undrained
  • 1 cup celery, sliced
  • 1 cup green onions, sliced
  • 1 cup green pepper, sliced
  • 1 cup water chestnuts, sliced
  • 1/2 cup sliced radishes
  • 1 tbsp. soy sauce

Directions:

In a skillet, combine soup, pineapple, soy sauce.

Add remaining ingredients. 

Simmer for 10 minutes while occassionaly stiring gently.

Golden Chicken Nuggets

  • 4 whole chicken breasts, skinned & boned
  • 1/2 cup unseasoned fine bread crumbs
  • 1/4 cup grated parmesan cheese
  • 1 tsp. salt
  • 1 tsp. basil
  • 1 tsp. thyme (or 1/4 tsp. powdered thyme)
  • 1/2 cup butter

Directions:

Cut chicken into bite-size pieces. 

Mix bread crumbs, parmesan cheese, salt, thyme, and basil. 

Melt butter and dip chicken into it.

Once dipped in butter, dip chicken into crumb mixture. 

Bake on foil-lined cookie sheet for 10 minutes at 400 degrees.

Curried Chicken Balls

Curried Chicken Balls

  • 2 (3 oz.) pkg. cream cheese, softened
  • 2 tbsp. orange marmalade
  • 2 tsp. curry powder
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 3 cups finely minced cooked chicken
  • 3 tbsp. celery, minced
  • 3 tbsp. green onion, minced
  • 1 cup toasted almonds, finely chopped

Directions:

In a mixing bowl, combine cream cheese, marmalade, curry powder, salt, and pepper. 

Beat until smooth, then stir in chicken, celery, and onion. 

Shape mixture into 1″ balls; roll in almonds. 

Cover and refrigerate until firm, up to 2 days.

Chicken Bits

  • 2 chicken breasts
  • butter
  • italian seasoning
  • parmesan cheese

Directions:

Remove bones from two chicken breasts. 

Cut chicken breasts into bite-size pieces. 

Dip in melted butter. 

Roll in seasoned bread crumbs (Italian seasoning with extra parmesan cheese added). 

Put on ungreased cookie sheet and bake in oven for 30 minutes at 350 degrees.
